Ingredients
Chicken filling

- 2 pounds boneless skinless chicken thighs, cut bite-size

- 1 teaspoon chili powder
Rice bake
- 2 cups cooked white rice
- 2 cups enchilada sauce
- 1 cup sour cream
- 1 cup chicken stock
- 1 1/2 cups shredded cheddar or Monterey Jack cheese, divided
Method
- Step 1. Heat 1 tablespoon of the oil in a large skillet over medium-high heat, season the chicken with 1 1/2 teaspoons of the salt and 3/4 teaspoon of the pepper, and brown it until it has real color on the outside.
- Step 2. Lower the heat to medium, add the remaining oil, onion, and bell pepper, and cook until the vegetables soften.
- Step 3. Stir in the garlic, cumin, chili powder, and remaining salt and pepper, and cook for 30 seconds.
- Step 4. In a large bowl, stir together the cooked rice, enchilada sauce, sour cream, stock, and 1 cup of the cheese until the mixture looks loose and evenly blended.
- Step 5. Fold in the chicken and vegetables, then spread the mixture in a greased 9x13 baking dish.
- Step 6. For baking right away, cover tightly with foil and bake at 375 degrees Fahrenheit for 35 minutes, uncover, top with the remaining cheese, and bake 10 to 15 minutes more until the center reaches 165 degrees Fahrenheit.
- Step 7. For freezing, cool the assembled unbaked casserole completely, wrap it tightly, and freeze for up to 3 months.
- Step 8. To bake from thawed, thaw overnight in the refrigerator, then bake as directed. To bake from frozen, cover and bake at 350 degrees Fahrenheit for 60 minutes, then uncover, add the remaining cheese if needed, and bake until the center reaches 165 degrees Fahrenheit.
- Step 9. Rest the casserole for 10 minutes before serving so the sauce settles back into the rice instead of running loose.
